Banana Protein Oatmeal Cups

Recipe:

Makes 12 cups

2 ripe mashed bananas

1/2 cup almond/coconut/rice milk

1/2 cup dissecated coconut

1/4 cup applesauce

1 teaspoons vanilla extract

2 tbsp melted coconut oil

1/2 tsp cinnamon

1+1/4 cup oats

1/2 cup vanilla protein powder

1/2 tsp gluten free baking powder

1/2 tsp baking soda

 

 

Directions:

* Preheat your oven to 170 C

* Combine the mashed banana, milk, apple sauce, coconut oil, vanilla and mix well

* Add in the oats, protein powder, baking powder, baking soda, cinnamon, dissecated coconut and gently stir until comnined

* Using a non-stick muffin tin fill each tin 2/3 full and top with a bana slice (optional)

* Bake for 15-17 minutes until golden brown

* Remove from the oven and allow to cool before eating

* Keep in the fridge covered for up to 1 week
