Flourless Peanut Butter Banana Muffin

Ingredients:

½ cup natural organic peanut butter

½ cup ground almond

2 very ripe bananas, mashed

1 teaspoon baking soda

1 teaspoon vanilla extract

3 whole eggs

½ teaspoon sea salt

¼ cup honey (or stevia, to taste)

1 teaspoon cinnamon

Optional add-ins: ½ cup chocolate chips, or 1 cup fresh raspberries, or ½ cup dried raisins or cherries, or 1 sliced banana

 

Instructions:

Preheat your oven to 150ºC and prepare a muffin tin with 12 paper liners.In a medium bowl, combine all of the ingredients mix until smooth. Fold in the mixture the optional add-ins if desired and then scoop the batter into each muffin liner.

Bake for 15 minutes at 150ªC.

Allow to cool for 15 minutes before removing from the pan. Serve immediately, or store in a sealed container in the fridge for up to a week!
