Blueberry Banana Protein Muffins

What’s good about it:
This recipe is Gluten Free, Dairy Free and Paleo.
Bananas are a great energy food and a great source of potassium and full of essential mineral. They add moisture and sweetness to baked goods, which means you can reduce the amount of sweetener and oil considerably. The Blueberries being very rich in anti oxidants like Anthocyanin and vitamin C, B complex, vitamin E and vitamin A.
These are the perfect on the go breakfast to make ahead of time. Packed full of protein and moist and fluffy, these are so delicious and completely guilt free.
Recipe:
Makes 12 muffins
3 ripe bananas
3 free range / organic eggs whisked
¾ Cups of Almond Flour
¾ Cups of Vanilla Protein Powder
½ Cup of Desiccated Coconut
1 ½ Teaspoons of Baking Powder
2/3 Cup of Coconut Oil, Melted
1 cup of Blueberries
Directions:
* Preheat your oven to 180 C.
* Mix all of the dry ingredients until combined.
* Add in all of the rest of the ingredients (except for the blueberries) and mix well.
* Fold in the blueberries.
* Line your cupcake tin with cupcake cases and evenly distribute the mixture between them.
* Bake for 20 minutes
* Remove from the oven and allow to cool
* Keeps in the fridge covered for up to 1 week
