Paleo Raspberry Banana Bread

I am a big banana bread lover, I absolutely LOVE IT! I always bake my own as the only time I decided to buy it from the organic shop it was a big disappointment, the first bite all I could taste was sugar and after reading the ingredients list I realized that its not that healthy as its baked with white flours, refined sugar and butter.


Here is a quick, simple and affordable way to make a variation of banana bread that everyone will enjoy. This is great to have at home when you are craving a guilt free treat.


Ingredients:

* 6 organic eggs

* 2 ripe organic bananas mashed

* 2 tbsp raw honey (optional)

* 1/3 cup melted Coconut Oil (cooled)

* 1/2 tsp sea salt

* 1/2 cup coconut flour

* 2 tbs Chia Seeds

* 1/2 tsp baking powder

* 1 tsp vanilla extract

* 1 tsp cinnamon

* 1/2-1 cup chopped raw pecans or walnuts

* 1/2 cup fresh or frozen raspberries

* 2 tbs cacao nibs


Directions:

1. Preheat oven to 180ªC and in a large bowl combine the eggs, honey, vanilla extract and the cooled coconut oil and mix really well.

3. In a separate small bowl combine the coconut flour, salt, cinnamon, baking soda and stir well.

4. Add the dry ingredients to wet ingredient (except banana) and stir until you have a smooth batter.

5. Fold in the mashed bananas and some of the raspberries until well blended into the mixture.

6. Pour batter into a coconut oil greased bread pan.

7. Top the bread with raspberries and cacao nibs.

8. Bake for 30-40 minutes or until lightly browned and crunchy on top.


Serve with coconut cream, fresh raspberries and cacao nibs.
