Paleo Chia Seed Buns.jpg

One of the things I miss the most from the days before I started my healthy journey is bread, being Portuguese we eat bread with everything and it's always the quick snack to go to. I'm always in search of some kind of Paleo bread recipes and really glad I found this recipe from The Little Green Spoon's website.

The original recipe is for a Bagel but since I don't have the right tools for that I just made them into buns. They are absolutely incredible toasted with eggs, smoked salmon, cream cheese, avocado or almond butter – all the ways you would eat normal bagels/buns. The best thing about them is how easy they are to make! This recipe is Gluten Free, Dairy Free & Paleo

Thought this would be a great breakfast treat to have with my friend Bettina after our morning jog and she really enjoyed it.

Ingredients:

* 2 Cups of Almond Flour/ Ground Almonds

* 2 Tablespoons of Coconut Flour

* 1 Tablespoon of Arrowroot Flour

* 1 Teaspoon of Baking Powder

* Pinch of Coarse Salt

* 4 Eggs

* 1/4 Cup of Cider Vinegar

* 1 Tablespoon of Agave

* 1 Tablespoon of Chia Seeds (or sesame, poppy, sunflower seeds etc)

Directions:

* Combine the almond flour, coconut flour, arrowroot flour, baking powder and salt in a large bowl

* Then add in the eggs, cider vinegar, agave and mix well until its thoroughly combined.

* Grease your donut pan well with coconut oil and then use a spoon to evenly spread out the mixture

* Then sprinkle the tops with the chia seeds.

* Bake at 180′C for about 15 minutes.

* Let them cool and enjoy!
