Paleo Sweet Potato Brownies

A few weeks back I went to the desert for some fun dune bashing; as usual I like to take some snacks with me as I know for sure I will be hungry. As there was quite a lot of us I knew nuts wouldn't do the trick and with so many sweet potatoes at home I thought of some healthy brownies that were a success in the past.


I decided to tweak a little my previous sweet potato brownie recipe and the result was really great, even our friends little boy loved it and kept coming back for more!


Ingredients:

1 medium sweet potato, boiled and then mashed with a fork

2 whole eggs

¼ cup ground almond

2 tsp vanilla extract

¼ cup of honey

¼ cup of coconut oil

½ cup coconut flour

1 tbsp of gluten free baking powder

½ tbsp of baking soda

½ cup of cacao powder (reduce the amount if you prefer a milder chocolate flavour)


Optional add-ons: ½ chopped walnuts


Directions:

* Preheat oven to 180 °C

* Combine sweet potato, eggs, vanilla, honey and coconut oil in a large mixing bowl and stir together until well incorporated. Then add the ground almond, baking powder and baking soda and stir. Add cocoa powder, mix and finally add coconut flour.

* After stirring everything together, cover your baking tray with baking paper and pour the mixture into it.

* Cook for 35-40 minutes (depending on your oven might be less). Remove the tin and cool for 5-10 minutes before removing the brownie cake from the tin. Leave the brownie cake to cool down before cutting.


*OPTIONAL: melt some dark chocolate in a bowl over boiling water or in a microwave. Use a spatula to drizzle and spread melted chocolate over the top. Slice into individual serving squares.


Preparation time: 10 minutes

Cooking time: 35-40 minutes
