I absolutely love breakfast and always have the tendency to go for savory dishes. Most people would find it odd to have this kind of food for breakfast but trust me -It's not!
On the weekend and after my morning workout I love to go back home and create something new, especially when I have my guinea pig (best friend) with me for breakfast!
Hope you enjoy it as much as we did.
Ingredients:
300g minced pork ( you can use any protein)
Tender steem broccoli (or Spinach depending on what's in your fridge)
Cherry tomato, in halves
1 small grated sweet potato
¼ cup coconut milk
1½ teaspoons tomato paste
1 tablespoon almond meal
¼ teaspoon dried oregano
chili powder to taste (optional)
¼ teaspoon sea salt
4 eggs
olive oil
Instructions:
Preheat oven to 170º C.
Cook the minced meat in some olive oil. Don't cook it for too long as it will continue cooking in the oven.
Add the grated sweet potatoes to the same pan and soften it for a few minutes.
Grease your baking dish and layer with the minced meat, sweet potato, broccoli and tomatoes.
In a small bowl, whisk together the coconut milk with the tomato paste, almond meal, oregano, chili and salt.
Drizzle the sauce over the layered ingredients, dividing evenly among the dish.
Bake for 15 min then remove from oven and raise the temperature to 190ºC.
Crack the 4 egg on top, being careful not to break the yolk.
Bake for 5-7 minutes longer, until the whites are cooked but the yolk is still soft.
Notes:
* This can be quite a sweet dish because of the coconut and the sweet potato so it's good to add some extra seasoning to cut down the sweetness.
* I served it with some avocado
* It can be stored in the fridge and once re-heated is still delicious
