Baked Eggs

I absolutely love breakfast and always have the tendency to go for savory dishes. Most people would find it odd to have this kind of food for breakfast but trust me -It's not!

On the weekend and after my morning workout I love to go back home and create something new, especially when I have my guinea pig (best friend) with me for breakfast!

Hope you enjoy it as much as we did.

Ingredients:
  • 300g minced pork ( you can use any protein)

  • Tender steem broccoli (or Spinach depending on what's in your fridge)

  • Cherry tomato, in halves

  • 1 small grated sweet potato

  • ¼ cup coconut milk

  • 1½ teaspoons tomato paste

  • 1 tablespoon almond meal

  • ¼ teaspoon dried oregano

  • chili powder to taste (optional)

  • ¼ teaspoon sea salt

  • 4 eggs

  • olive oil

Instructions:
  • Preheat oven to 170º C.

  • Cook the minced meat in some olive oil. Don't cook it for too long as it will continue cooking in the oven.

  • Add the grated sweet potatoes to the same pan and soften it for a few minutes.

  • Grease your baking dish and layer with the minced meat, sweet potato, broccoli and tomatoes.

  • In a small bowl, whisk together the coconut milk with the tomato paste, almond meal, oregano, chili and salt.

  • Drizzle the sauce over the layered ingredients, dividing evenly among the dish.

  • Bake for 15 min then remove from oven and raise the temperature to 190ºC.

  • Crack the 4 egg on top, being careful not to break the yolk.

  • Bake for 5-7 minutes longer, until the whites are cooked but the yolk is still soft.

Notes:

* This can be quite a sweet dish because of the coconut and the sweet potato so it's good to add some extra seasoning to cut down the sweetness.

* I served it with some avocado

* It can be stored in the fridge and once re-heated is still delicious
