Spicy Tuna Cakes

Finding healthy snacks can be quite a challenge since I like easy recipes with a small ingredient list. These Spicy Tuna Cakes were inspired by Nom Nom Paleo's recipe and if you give it a go you will be in for a great treat.

These are perfect for morning/afternoon snack, pre/post workout or even for a main meal if you add in some veggies or a salad. They are the perfect snack on the go with some protein and healthy carbs.

Ingredients:

* 3 tablespoons melted ghee, divided

* 2 cans of tuna (mine were 160g each)

* 3 spring onions thinly sliced

* 3 tablespoons finely minced Coriander (you can adjust to taste)

* 1 medium mashed baked sweet potato

* finely grated zest from half lemon

* half small chilly, chopped very finely

* 2 large eggs

* red pepper flakes (to taste)

*salt & pepper

Directions:

* Preheat the oven to 180°C, and use a brush to grease a 12-cup regular sized muffin tin with one tablespoon of melted ghee.

* In a large bowl, mix together the tuna, spring onions and coriander. Add the mashed sweet potato to the tuna mixture, and gently combine.

* Then, mix in the lemon zest, chopped chilly, the remaining two tablespoons of ghee, eggs, and red pepper flakes. Season with salt and pepper to taste.

* Scoop a quarter cup of the mixture into each greased muffin tin cup and flatten with the back of a spoon.

* Bake the tuna cakes for 20-25 minutes or until an inserted toothpick comes out cleanly.

* Transfer the cakes to a wire rack to cool.
