Grain free chocolate cupcakes

I have to admit that my blog has been completely neglected since I changed jobs and went back to the hospitality industry.. and so has my social life and waistline!! It has been great to be back in the restaurant business but it's extremely hard to resist temptation..


Lately I've been having some crazy sugar cravings and the easy thing was to go for whatever chocolate or sweets were available that always tastes so good but leave you with a guilty conscience. As I've decided to go back to training hard it makes sense to clean my diet again, at the end of the day it's 20% Gym and 80% Diet so there is no way around it!


I had some inspiration for this recipe from Instagram and decided to give it my usual twist. For those who were lucky to try them they seemed like happy campers! Hope you enjoy it.


Ingredients:

* 1 1/2 cups of Almond meal

* 1/4 cup organic cacao powder

* 1 tsp gluten free baking powder

* 2 organic eggs

* 1 tsp vanilla extract

* 1/4 cup extra virgin coconut oil (Macadamia nut oil or avocado oil will also work)

* 1/4 cup unsweetened almond milk (any other milk will also work)

* 3 tbsp raw honey (maple syrup will also work)


Directions:

* Preheat the oven to 160C fan forced (or 180C no fan)

* Combine all dry ingredients -almond meal, cacao powder and baking powder

* Add the eggs, coconut oil, vanilla extract, milk and honey. Mix well to form a smooth batter

* Spoon into 12 small individual cupcake tins

* Bake for 25 minutes until cooked through

* Serve alone or topped with chocolate ganache


I added a few chocolate chips before putting them in the oven and it was delicious!
