Almond Butter Blondies

Blondies must be coming back in "season" as I keep seeing them everywhere lately. This recipe was inspired by TheLittleGreenSpoon but as usual I changed it a bit and they turned out to be amazing. I thought they were a little too sweet for me so will adjust the honey to what I think would be the perfect quantity but feel free to adjust it to your taste buds.

These are perfect for a snack or to have with a nice cup of coffee when the sugar cravings kick in.

Ingredients:

2 cups of ground almonds

1/4 cup of desiccated coconut

1 tsp of baking powder

1/3 cup of almond butter (or any other nut butter)

2 eggs

1/4 cup of raw honey

1/3 cup of coconut oil (softened)

75g dark chocolate chips or Cacao nibs

Instructions:

* Preheat oven to 180 °C (fan forced)

* Combine all wet ingredients into a large bowl

* Add all the dry ingredients and mix well

* Last thing you do is add the chocolate chips

* Spread the mixture into a baking tin lined with baking paper

* Cook for 20-25 minutes

* It might feel very soft when taken out of the oven but as soon as it cools down it will be a bit harder and still gooey inside.

* once they've cooled for about 10 minutes, slice them and Enjoy!

Preparation time: 10 minutes

Cooking time: 20-25 minutes
