Cashew butter chocolate chip cookies

This is a new take on my previous recipe of Chocolate chip cookies. Since I had a lot of cashew nut butter that needed to be used I thought of trying to add it on cookies to make them a bit more gooey. It worked really well and I have to admit that I prefer this recipe.

If you want to swap the cashew butter by any other nut butter, I'm sure the result would be great too.

Ingredients:

1 ½ cup ground almond

3 tbsp of cashew nut butter (or any other nut butter)

2 tsp vanilla extract

1/8 cup of raw honey

½ tsp baking soda

2 tbsp of water

1/8 cup coconut oil (softened)

1/4 cup dark chocolate chips or Cacao nibs

Pinch of salt

Instructions:

* Preheat oven to 160 °C (fan forced) and make sure the oven is hot before you put the cookies in

* Combine all wet ingredients into a large bowl

* Add all the dry ingredients and mix well until if forms a sticky dough

* Last thing you do is add the chocolate chips

* Place the cookies onto a baking sheet

* Cook for 12-15 minutes

* They might feel very soft when taken out of the oven but as soon as they cool down they will get a little harder

* Enjoy!

Preparation time: 3 minutes

Cooking time: 12-15 minutes

These are healthy cookies but doesn't mean it's good to have the whole batch.. it's to help with your sugar cravings and treating you to something sweet and still nutritious.
