Banana chocolate chip blondies

These blondies are super chewy and fudgy, you'll find yourself going back for more in no time.


Ingredients:

2 very ripe bananas

128g almond butter (or any other nut butter)

50g coconut oil

80g coconut sugar

70g almond flour (or any other nut flour)

25g coconut flour

1 tbsp vanilla extract

1 tsp cinnamon

1 tsp baking soda

chocolate chips to taste


Method:

* Preheat the oven at 180C

* Start by mixing the banana with the almond butter, coconut oil and vanilla extract;

* Add in all the remaining dry elements and mix until you have an even mixture;

* Fold in the chocolate chips at the end

* Line baking paper into a round or square small baking tray and add in the cake mix

* Bake for 20min or until lightly brown

* After cooling down can be kept in the fridge on an air tight container for 5 days


These blondies are the perfect mid day snack and go really well with a cup of coffee!
